Chef Brian's love of cooking became apparent at the age of three when his mother awoke to the sound (and smell) of sauteed Cheerios. He spent his boyhood watching his mother, aunts and grandmother in their kitchens. When other young boys would run home from school to watch cartoons or play, Chef Brian would race home to watch his favorite cooking shows. His father once commented, "I am starting to worry about that boy."

Later, as a meat cutter, Chef Brian learned all about meat and the best ways to prepare the different cuts from different parts of the animal. His love of cooking always helped out in the dating department too. It eventually helped him land the love of his life, Karen.

After a few years working in the chemical industry, his love of cooking led him to the United States Personal Chef Association (USPCA). Chef Brian became one of the first members of the Association and has helped to form the industry. After forming the Michigan Chapter of the USPCA, Chef Brian went on to develop the by-laws for the first National Advisory Council of the USPCA. He was also involved in the certification process that has become the standard for the industry. As a leader in the industry, Chef Brian presents seminars / classes to over 400 Chefs each year at the annual USPCA Personal Chef Conference.

Chef Brian has worked with UAW/Ford over the years teaching culinary classes throughout the mid-west. It is during those years that he developed his "Grilling Simplified" techniques and "Cooking Simplified" classes. The same classes are now being offered at "The Firehouse" in Wyandotte, Michigan and The Clairmont House Bed & Breakfast in St. Claire, Michigan.

Chef Brian's specialties include - Mexican, Grilling, Barbecue (yes, there is a difference!) He describes his cooking style as Midwestern Gourmet ~ not too fancy ~ just real good food and plenty of it!

Chef Brian's hobbies include: Writing, Fishing, Cooking and long walks on the beach.
